The Tel Aviv-based startup Eatsane now offers a range of products made with high-fiber, high-protein ingredients and no artificial additives or sweeteners.

When Ran and Dorit Hirsch struggled to find satisfying, diabetes-friendly meals for their daughter Hadar, then 8, they didn’t expect chocolate to be part of the solution.
But during a visit to endocrinologist Dr. Mariela Glandt—who promotes a ketogenic approach to managing diabetes—Hadar was handed a praline that didn’t spike her blood sugar.
Glandt, whose father had diabetes, had spent years crafting low-glycemic sweets in her home kitchen.
She expressed a vision of making such foods accessible to people with diabetes globally. Inspired, Hirsch, a lawyer with a background in biology, offered to help bring that dream to life.
Together, they founded Eatsane in 2017. What began as an attempt to mass-produce low-carb chocolates evolved into a broader mission: to reinvent everyday foods—bread, bourekas, pizza—without the high carbohydrate count.

Eatsane’s breads contain about one-fifth the carbs of standard loaves and have a glycemic index (GI) of 30, compared with 70 for wheat bread.
The loaves are made from spelt flour, nuts, seeds and plant-based protein, and they come in sourdough, rustic, and multiseed varieties.
According to Hirsch, the switch is so seamless that even his children didn’t notice when he replaced their school sandwiches with Eatsane bread—cutting their carbohydrate intake from 30 grams per sandwich to under 3.
The company’s products are sold in Israeli health food stores and used by restaurant chains such as Papa John’s and BBB Burgers. Since 2020, revenue has grown from NIS 1.4 million to NIS 7.8 million (about $2.3 million).
Eatsane has also attracted investment from major backers, including the former CEO of Teva Pharmaceuticals and international food giants such as Bimbo. It was selected by PepsiCo’s Nutrition Greenhouse incubator as one of 10 promising food startups.
